Dominique Eluere, founder of the Citadel knife brand, for his need to have quality knives for his restaurant in Vietnam and not get them easily, began to manufacture them himself. Dominique, began working with a Cambodian blacksmith in the city Phnom Penh in Cambodia, where he settled, making high quality katanas and cutlery in a completely handmade way. This was not easy, the Japanese methods of construction of the katanas are secret and very guarded and they had to break and throw away many blades before offering a quality product. The knives of Citadel knives and knives are forged in coal forge and hammer manually with differential quenching processes to obtain high quality blades. Their production is scarce, given the process of artisanal realization, so they are not usually found very easily.
