Dominique Eluere, founder of the Citadel brand of knives, due to his need for quality knives for his restaurant in Vietnam and not to obtain them easily, began to manufacture them himself. Dominique began working with a Cambodian blacksmith in the city of Phnom Penh in Cambodia, where he settled, making high quality katanas and cutlery in a totally handmade way. This was not easy, the Japanese katana construction methods are secret and closely guarded and they had to break and discard many blades before offering a quality product. Citadel knives and pocket knives blades are forged in a carbon forge and hand hammered using differential hardening processes to produce high-quality blades. Its production is scarce, given the process of artisanal realization, so they are not usually found very easily.
