The Aitor "Cuchillo de Monte" or Aitor Oso Negro (civilian catalog version) is a legendary survival and combat knife, considered by many experts to be one of the best in its category due to its configuration, balance, and handling. Its primary use is for tactical, military, survival, and adventure operations. Historically, it has been used by the COE (Special Operations Company) of the Spanish Army, as well as numerous other forces around the world. The Spanish Army's Standard Hunting Knife was officially adopted in 1983 for the Spanish Armed Forces, specifically for Special Operations (SO) units. While the basic design is that of the Aitor Black Bear, the military model has some differences.

The Hunting Knife has a stainless steel blade with a black protective coating, a clip-point tip, and a curved, serrated edge. The spine of this blade features a serrated double-serrated crenellation, ideal for survival tasks. The handle is made of grained textured polyamide for a firm grip. The guard and pommel are black chrome-plated steel. The sheath is made of green polyamide with a green Cordura quick-release strap or holster, allowing the knife to be removed from the belt without having to unclip it. This sheath also has a drainage hole and a lanyard at the end to secure it to the leg and prevent it from sagging.

The legacy of both the Black Bear and its military variant, the "Mountain Knife," are considered true legends in survival and tactical knifemaking. Its reliability and durability under the most demanding conditions, along with its history linked to the army's special operations units, have cemented its worldwide prestige.
