Natural stones from the Pyrenees are highly valued because, although they are slower than diamond or synthetic stones, they offer a finish (polishing) that industrial stones can hardly achieve. For sharpening gouges, a flat stone is not enough because you can't reach the inside of the curve (the "channel"). You need stones with specific shapes called slip stones.
